Matthew Nilon is the General Manager of the highly acclaimed M on the Bund and M Glam, a division of the M Restaurant Group.In this role Matthew is responsible for all facets of restaurant’s daily operations both front and back of house. Working in collaboration with the Executive Chef, Matthew is involved in the creation of the restaurant’s menus whether the multi-course tasting, seasonal a la carte or special requests for private functions.As a coach and mentor, Matthew works closely with all members of the M on the Bund and M Glam team to ensure both an understanding and implementation of the organisation’s customer service corporate values.Working in collaboration with the private functions and events clientele, Matthew focuses on creative and unique ideas to ensure a memorable experience for all of those involved and one that meets the overall objectives of the client.Part of Matthews contributions to the M Company are is the organisation of monthly events, whether it be a talk in association with the Shanghai International Literary Festival, Chamber Music or children's event.With over 25 years of experience in the restaurant industry and specifically the fine dining segment, Matthew continually is upgrading his industry knowledge with further training such as certification through the Wine & Sprits Education Trust (WSET).
