· Opened in summer 2013, I joined during the construction phase and led all aspects of the preopening planning, menu development, supplier negotiations, product testing, food cost analysis and training for a staff of 100 people· With an opening season per-cap of $5.25, I lead for improvements to the food and beverage program based on guest feedback and company goals and Increased per cap in the second season to $5.65, and increase of 8%· Food and beverage gross sales topped $2 million in year two with 8 locations· During the winter of 2014, I supported and assisted in the launch of Wet n Wild Sydney as a food and beverage manager just after park grand opening to help set up a foundation for the park based on the experience and success of the Las Vegas property

American Airlines Center

· Managed day to day operations of 40 food locations and over 100 crew members for a concessions and vending operations generating $20 million annually at the home of the Dallas Stars NHL and Dallas Mavericks NBA franchises along with over 50 other touring concerts and shows· Made significant impact on the cash handling procedures for the concessions department by re-writing the policies for safe handling of cash and loss prevention· Revitalized the vending program by adding tight inventory control procedures as well as sales tracking, building a top performing team· Designed an open house style interview process to review potential non-profit groups before enlisting them in the non-profit group program

Six Flags Great America

· Responsibility for the effective execution of 13 retail locations and over 100 crew members· Handled all merchandising for park special events including concerts· Designed an up sell program to increase sales of specially selected retail items· Supported full operation including merchandising, inventory, and customer satisfaction· Oversaw all Lessee operations for the Retail department

· Managed and scheduled for a staff of over 100 crew members and supervisors including those working in Guest Services, Ticket Selling, Ticket Taking, Bag Check, Tolls, and Parking.· Constructed the operation manuals for all six of the Guest Arrival areas as well as trained all crew members and supervisors in preparation for the opening of a brand new park.· Coordinated with upper management to devise an appropriate budgeting system of labor hours for Guest Arrival.· Handled guest complaints/issues and work with them to reach a common goal of satisfaction.

· Managed the store when Manager was not present.· Required to meet certain customer service and sales goals presented by upper management.· Helped to prevent shrinkage by theft and improper cash register usage by using previously learned loss prevention methods.· Accountable for maintaining visual merchandising standards set by Champs Sports Corporate · Responsible for the cash register and making sure that the drawers were balanced at the beginning and end of each day.

· Assisted in the sales and customer service for groups of guests between 25-149 people from the time of booking their trip through the follow-up.· Supervised catered events for affairs with up to 6,000 guests.· Worked with the marketing department on the VIP program as well as launching new advertising on the popular Facebook and MySpace networking websites.
