My graduate research explored the predisposition of hydrated wheat flour to spontaneously gel under oxidative conditions, and how the capacity to do so changes over time as a function of both wheat grain age and milled wheat flour age.In my professional career in the snacks sector of the CPG industry, I have gained invaluable experience navigating the minutia of operating in numerous food manufacturing facilities across the United States, optimizing the quality and manufacturability of foods that I have had the opportunity to develop both internally and with co-manufacturers. I have had market success utilizing existing base products to develop line-extension seasonings, and have developed a national-trend-setting snack base with four accompanying seasonings.Within defined guardrails for each brand for which I develop, I strive to maintain the balance between cost-effectiveness, procurement flexibility, scalability, and manufacturing consistency in order to provide the consumer with the best eating experience possible, all while delivering on novel, trend-forward flavors with a clean ingredient statement.I have a vested interest in understanding the role of each individual function within a company [Operations (and the individual roles therein), QA, QC, Marketing, Sales, Regulatory, Legal, etc.] in order to maximize my efficiency as a product developer while minimizing risk to the company and brands with which I work.As a food scientist, I value cross-functional knowledge transfer because I believe it not only makes for a more robust working environment, but also for a more well-rounded individual and asset to the company.Outside of my professional career, I have dedicated countless hours to the craft of artisan bread making. Since starting in January 2012, I have gained expertise in the field of wheat quality. My research delves into the predisposition of certain NW soft wheat varieties to undergo oxidative gelation when the flour is hydrated, and how the capacity to form this gel changes as both the grain and flour age before testing. This phenomenon has a profound effect on the performance of a wheat variety in a food production setting, and the quantification of such could account for the previously unexplained variation in end product performance in the soft wheat industry. My research also looks into the effect of aging on relative polymeric swelling for the wheat varieties upon hydration in the same aging study.

I have gained experience with various aspects of wheat quality testing, from tempering and milling, to end product performance assessment. I have an understanding about how the different physical properties of wheat will affect its end product performance. Routine lab works includes testing for falling number, alpha amylase content, PPO, SRC in water, sucrose, lactic acid, and sodium carbonate, flour yield (and break flour yield), kernel hardness, moisture content, and protein content, as well as protein quality via mixograph and HPLC.
