-Otoko is one of the premier dining experiences in Austin, garnering praise and comparison to Michelin-starred omakase experiences worldwide. As a team member, expectations for expertise and service are very high to ensure a consistently stunning guest experience.As one of the two lead bartenders of Watertrade (Otoko's cocktail lounge), I am responsible for collaboratively guiding a minimalist staff, developing the cocktail menu, and curating the back bar of over 400 different bottles of predominantly Japanese origin.-Watertrade bartenders work with the elite chefs of Otoko including internationally known Executive Chef Yoshi Okai (Food & Wine's Best New Chef 2017) to develop signature cocktails driven by culinary flavor profiles and techniques.-Aside from the developed cocktail menu, bartenders are expected to pull from an array of cocktail structures to create custom cocktails to-order featuring our spirits, house ingredients, and an array of 50 bitters and homemade tinctures.-Custom curated Japanese Whisky flights are a special offering, with over 300 different bottles to pull from. There are no pre-set flights, as every flight must be assembled with the individual guest's preferences and designated price range in mind.-With no bar manager or barbacks, all responsibility falls on the bartenders to preform extensive prep for three hours before every service and maintain adequate levels of ingredients and batches.
