WINE BUSINESS MANAGEMENT:• Oversee wine-making decisions on California Brands: Rickshaw, Guenoc, Lost Angels, and Butterfield Station Wines• Coordinate 400K-case annual production using weekly meetings to maintain an efficient bottling line schedule• Develop budgets for the analytical laboratory, bottling QC laboratory, and harvest purchases• Facilitate effective and streamlined communication among the winemakers, cellar master, and cellar staff• Manage all matters relating to laboratory technicians and harvest interns including hiring, coaching, and trainingLABORATORY OPERATIONS:• Monitor wine integrity while scheduling, receiving, and processing of fruit during harvest (Over 8000 tons in 2019)• Perform sanitation validation and troubleshooting through swabbing, record, and data review• Purchase new equipment and monitor, maintain, calibrate, and troubleshoot routine common issues• Complete timely and accurate analysis of juice and wine; Utilize WMDB in creating blends and data entry• Oversee QA and conduct product and packaging quality assessments to ensure quality of wines/finished productsSENSORY ANALYSIS & PRESERVATION:• Collaborate with the head winemaker on tasting, blending, and fining trials on all Sebastiani Brands• Demonstrate strong interpersonal skills while presenting tastings to winemakers and winery owners• Experience in creating and evaluating blends and trials; Extensive tasting of juice and fermentations• Create micro ox program, including initial set up and weekly tastings to identify problems and record progressCELLAR OPERATIONS:• Perform regular wine quality checks, including monitoring chilling and heating of inoculating tanks and barrels• Conduct inventory checks for potential issues such as storage container leakage, damaged equipment, and safety• Help identify new techniques to improve wine quality and cellar practices within budgeting constraint
