In consecutive senior management roles for Tattersall’s Club Brisbane and The Brisbane Polo Club, I spearheaded operations within the food and beverage departments of the two-clubs. As Director and Manager of Food and Beverage, I provided effective sales leadership and orchestrated all aspects of corporate functions and special events. I recruited, trained, and supervised performance activity of the front-of-house staff and department management teams and collaborated efforts to rollout the new back-of-house Micropower Club Management Software computer system for the Brisbane Polo Club. I played an integral role in increasing wine sales by 30% and reducing beverage costs by 20% for Tattersall’s Club Brisbane by designing the restaurant menu and curating the product portfolio of selected beverages including beer, liquor, and wine. And, I increased member engagement by developing and implementing revenue-generating marketing and retail strategies and initiatives and negotiating supplier contracts.

I defined and enforced operational processes, drafted training manuals, and ensured staff compliance to occupational health and safety (OH&S) policies and procedures. And, I developed and managed budgets, procured and allocated resources, implemented cost-effective pricing, and performed financial forecasting and profit and loss (P&L) analysis.

As the Food and Beverage Outlet Manager for the Hotel Stamford Plaza Brisbane, I directed operational and team performance activity within the food and beverage outlets of the hotel including the 250-seat Siggi’s Fine Dining restaurant. I held full financial and P&L accountability, maintained inventory stock, and created the beverage and wine menu including established and updated pricing and menu items. While in this role, I received several awards including Best Fine Dining in Brisbane, 5-years of Continuous Service, and Employee of the Month for securing guest satisfaction through effective leadership, instilling interdepartmental consensus, streamlining workflow, and ensuring compliance to health and safety guidelines.
