RoundsmanRepublic Food Enterprise Center Aug 2017 - PresentRepublic PennsylvaniaIn 2013 I found Republic Food Enterprise Center, an innovation kitchen where i could make my Mister G'z Slatherrring Sauce. From 2013-2018 I produced my Gourmet Condiment in this production Kitchen. This was my own business and not related to RFEC. In August 2017, I was hired as the Aquaponic-Value Added Senior Coordinator. The position was soon split into just the Value-added Coordinator. My duties included processing produce from various farms and co-pack customers into products which could be used at a later time by either freezing or canning. As the growning season wound down in the winter months, RFEC became involved in the Farm to Table project involving the Moorhead Federal building in Pittsburgh Pa. This cafeteria serves appox 300-400 people daily with a staff of 5 employees all from the Pittsburgh area. By late May 2018 I was asked to become the Exec Chef for the cafeteria until a suitable replacement could be found, at which time I would return to Republic Foods and continue as the Value-Added Coordinator.

Our ingredients are sourced from local sustainable farmers and beekeepers. Our Slatherrring Sauces us a large variety of sweet and hot peppers from the cubanelle to the hobanero. We utilized 4 local organic farms. Our biggest hurdle was the cost of the product. We were also using a high end balsamic vinegar with no caramel color or sulfites. Our vision was to produce this sauce in 5 regions around the USA so the the produce and honey would be local to those areas and reduce shipping from one main location. If we are able to get these two products off the ground, the other 10 products to include condiments and salad dressing will follow. Product development, to include type of bottles, e-comm, farmer markets and Farm to Table events.
