Awarded a competitive summer research project scholarship.Project Title: Characterisation of the polysaccharide glucomannan for a better health: innovation using spectroscopyAbstract: Dietary fibres are non-digestible plant derivatives, carbohydrates important to human health. KGM, konjac glucomannan is a common fibre used in South and East Asian medicines and food. There is no established method for the quantification of degree of acetylation (DA) for this polysaccharide. A standard method for the analysis of DA was investigated in this study, utilizing solid-state IR and NMR spectroscopy. It was found that ATR-FTIR spectroscopy led to repeatable data but no monotonic relationship was confirmed between spectroscopic techniques.
