Responsible for 3 hotels (IHG Citystars) & WHO as follow:1. Intercontinental Cairo Citystars 2.Holiday Inn Citystars3. StayBridge Suites CitystarsAchievement of Outstanding Performance Award 20121. Establishing & Implementation Food Safety Management System through: Establishing & updating HACCP Team in addition to detection & distribution of their responsibilities. Establishing & updating HACCP Manual, the HACCP plan & ensure correct implementation of the plan. Data and documentation control of the HACCP plan procedures & updating when changes taking place.2. Carrying out Monthly audit for the three hotels and WHO, plus daily inspection of the supplier problems, receiving process, catering outlets plus main kitchen, main stores & swimming pools (inspecting the whole food handling chain from farm to fork).3. Taking corrective actions when checks show something is not in place.4. Leading of the bimonthly HACCP meeting & writing a report with action plan & target dates, in addition to following up the action plan implementation.5. Setting of training sessions for the staff on weekly basis.6. Communication between kitchen, stewarding, engineering, bars, purchasing, housekeeping, stores, receiving & restaurants.7. Responsible for the pest control company team concerning the F & B outlets, banquet & stores.8. Directing the hygiene team in the three hotels and leading them to achieve good results.9. Complete responsibility for all safety related audits like Q/A, Governmental audits, third party .. etc.10. Carrying out a proper and professional investigation report in case of any guest complaint related to food or beverage (Food poisoning, Foreign body .. etc).11. Samples collection for lab analysis and setting an action plan based on the lab results:a. Food, water & ice samples.b. Hand, throat, surface swabs, urine & Stool samples.
