Create and execute new and exciting recipes for a Paleo and holistic meal delivery menu.

• Create and make updates to four week cycle menu using WebTrition software• Kitchen oversight, quality control, and safety standard implementation• Manage kitchen staff of 10-12 cooks serving between 2,800 – 3,500 customers per day• Work with all vendors to ensure accurate and timely daily deliveries while procuring the best prices available for all deliverables• Review all daily menus for 7 serving stations including breakfast, lunch and dinner to create ‘shopping lists’ for purchasing• Execute all purchasing for two dining halls on campus including one strictly Halal kitchen• Manage food cost to ensure that weekly and monthly budgets were met as well as Cost per Meal maximums were not surpassed• Use existing data to predict customer flow daily, weekly and monthly to maintain inventory levels to reduce costs and spoilage• Inventory reporting for perishable and non-perishable items including produce, proteins, dairy, dry storage, chemicals, etc.
