Ping Pong is a vibrant and thriving group of Dim Sum restaurants in London with a number of great locations across London.My role at Ping Pong was to lead the Operations Team, including those responsible for key projects, new sites, HR, training, product and service delivery. We developed a talented and diverse team of GM's who were encouraged to be mini Managing Directors of their businesses, controlling not only their P&Ls but also their Capex budgets.I successfully contributed to the culture of the business through encouraging empowerment to our front line teams to give the best possible guest experience. I also encouraged a culture of accountability which resulted in difficult decisions being taken and not avoided. At the time of my departure Ping Pong was a well resourced business with a young but talented GM population who had been grown from within and had genuine passion for the Ping Pong product and service.

My remit was to undertake a root and branch review of all F&B operations for the 37 provincial casinos, identify and implement new restaurant and bar concepts and develop centralised policies, procedures and procurement solutions.

I led the UK F&B team for the managed hotel estate, developing products, menus and tactical activity for 66 branded hotels. As well as leading the central team, I was responsible for ensuring the hotel teams were well informed, aware of the strategic objectives for Food and Beverage and that they consistently delivered to the respective brand expectations.

I held the role of General Manager in both Heathrow and Gatwick Airports, two of the highest profile contracts SSP operated. During my tenure, I delivered significantly improved financial returns and client relationships.
