My project aims to characterize the microbial communities of traditional Filipino fermented foods.Fermented foods have seen a resurgence in popularity over recent years, due in part to the popularization of "probiotics" in the consumer marketplace. Modern advances in molecular genetics have enabled researchers to begin studying the bacterial populations of some of these fermented food products, like kimchi. Yet although traditional fermented Filipino foods have existed for centuries, little work has been done focusing on these fermented foods, which are staples for many Filipinos. My project aims to study traditional Filipino fermented foods through the lens of microbiology,using genetic sequencing to explore and characterize the microbial communities of Filipino fermented foods. Additionally, I hope to assess how different regional food preparation traditions impact the final fermented food product produced, as the regional variations in bacterial communities or molecular characteristics that result from the geography and cultural diversity of the archipelago have not yet been characterized.I will conduct my project at the Philippine National Institute of Molecular Biology andBiotechnology at the University of the Philippines Los Baños, working with some of the leading Philippine scholars in the field of food science and biotechnology. -
