Lead in a restaurant in which the space is a multi-use facility serving as restaurant, bar, and club lounge. Due to its ninety year old history the guests vary from celebrating decades of marriage to very formal business dinners. Having to provide completely different experiences while also catering to the club lounge members makes for serious, but extremely fun nights of multi tasking.

Sixteen Restaurant ChicagoExpeditor• Worked side-by-side with the Executive Chef in an intensely fast-paced environment to insure that every dish made it to the table in a seamless manner• Ran the ticket board and made sure that courses were fired appropriately• Responsible for set-up/breakdown of the kitchen and all service mis en place, including the restaurant’s cheese cart• Helped to art direct each menu’s layout, including hand-drawing multiple pieces (featured in the Chicago Tribune, Fall 2013)• Created a number of time-lapse and portrait pieces which were displayed in the dining room to visually enhance the guest’s experience• Expanded my knowledge of an array of cuisines, wines, coffees, teas and cheeses from all over the world• Aided in the creation and execution of multiple different menus• Trained in proper service etiquette, including French service styles• Learned about the flow of service and how to move with pace in a dining room.
