About Mikala Wright
I am currently working as a Enforcement Officer (Food regulation and control) for Bedford Borough Council. My background has always been catering, I trained as a chef following completing sixth-form and I worked my way up to dual site Catering Manager. I am extremely passionate about food safety and thrive on teaching others new skills and watching individuals and teams grow in confidence. I am very ambitious and give my all in every task presented to me.I am a very honest, loyal and hard working; I keep to deadlines, have excellent communication skills and management skills. I work well under pressure, am not afraid of taking on responsibility and enjoy a challenge. I was the Compass Group south-west regions Health and Safety Champion for 5 years, I have a keen interest in HSE, regularly attended meeting with other champions within Compass group and was part of the HACCP team which created the BMI Healthcare FSMS rolled out in 2019.I completed my CertHE in Food Control at Coventry University 2020/21 and fully qualified as a food safety practioner in November 2022. I am looking to learn new skills and meet new people within the Environmental Health and Food Safety industrie.

Catering Manager
I took the Catering Manager position at BMI Saxon Clinic as I was ready for a new challenge. I managed a team of 14 staff making sure the highest standards are met in all areas of catering in the hospital, from making sure all menu items are available, to the presentation and delivery of the food to all patients and staff. Duties I complete regularly are.

I started in the Junior Ranks Mess as a chef de partie cooking three meals a day for up to 800 training recruits. In December 2011 I was moved to the Warrant Officer and Sergeants Mess as Head Chef to join a smaller team that catered for up to 300 Sergeants daily. I had to write menus and order stock making sure I did not exceed the budget of £2.34 per.

I started working at the White Horse as a Commis Chef, I had little experience but had a passion for cookery. In August 2008 the pub was sold and the new owner and everything was made using fresh seasonal ingredients. Over time I grew in confidence and in April 2009 I was promoted to Sous Chef and took on more responsibility including all main meal.
