Develop new products and perform plant trials as well as integrate successful trials to the production level. Assist the quality assurance department in writing product specifications for new products. Assist quality department in addressing microbial issues found in the plant.Assist plant in securing new technologies and equipment to improve existing processes.

Responsible for supervising employees on the line, oversee the cheese making, and cleaning of string cheese department. Troubleshoot any processing problems to minimize down time, and maximize efficiency. Perform cheese maker duties in relief of cheese makers, inoculate starter cultures, perform CIP’s and ensure employees are trained and performing their jobs in a safe efficient manner.

Perform cheese maker duties, pasteurize and facilitate the storage of raw milk, operate CIP system, perform inoculation and transfer of mother culture and lactic starter, carry out laboratory work including: total solids, pH, fat, and salt analysis of cheese. Worked as the safety chairman, as well as part of the HACCP team.
