About Mike Wajda

Mike Wajda brings years of experience and a passion for sustainable locally sourced ingredients. Wajda graduated from the Pennsylvania Culinary Institute in 2007 and went on to work as the Chef De Partie at Restaurant Gordon Ramsay at the London Hotel in New York City. Wajda grew tremendously during the three years he worked alongside the world-renowned chef. In 2010, Wajda left New York City to work at multiple restaurants up and down the East Coast, including Craigie on Main in Cambridge, Massachusetts, and in 2014 brought his experience and expertise to the Michael Mina Group in San Francisco as their Corporate Sous Chef. In that position, Wajda helped to manage 23 restaurants and over 1500 employees, and during his tenure, helped open seven restaurant concepts around the country all within a single year.From growing up around farms in Ohio, Wajda holds a passion for using sustainable, locally-sourced ingredients. When Wajda took the helm as Executive Chef at Louisville’s Proof on Main in 2015, he was able to more fully explore this farm-to-table passion. His menu at Proof on Main, housed within the 21c Hotel, showcased Wajda’s unique, modern approach to comfortable and accessible cuisine with a focus on sourcing seasonal produce from Kentucky and the surrounding area from local purveyors, farmers & foragers. In an effort to pioneer a new way to experience charitable causes, Wajda moved to Lodgic Everyday Community as their Senior Executive Chef where he helped nourish aspirations through American Foodways.Mike currently lives in Louisville KY with his wife and daughter.
