I have been a home brewer for the last 4 years - brewing hop forward beers.Over the years, I’ve learnt about the brewing process and experimented with different malt bills, exploring their impacts on body and head retention. Additionally, I have experimented with a range of different hops: both leaf and pellets. I’ve improved my brewing kit to allow me to ferment under pressure in a temperature controlled chamber, dry hop without the presence of oxygen and I now have a closed transfer to kegs. I modified a fridge to house 3 x 19L kegs and dispense through 3 taps using CO2. I’ve become fascinated about the effects of adjusting my water profile to gain the desired mouthfeel and flavour. My roles at Helmsley:• Day to day brewing in a 8hL manual brewhouse, producing up to 32hL a week.• Overseeing the whole brewing process of wort production, fermentation, maturation and racking as well as tank cleaning using manual CIP processes and manual cleaning practices.• Understanding the impact of temperature on the whole brewing process.• Deliveries• Managing fermentation schedules – recording and responding to key measures.• I have helped produce a recipe for a new lager• Attended this years SIBA conference, where I had the chance to talk to other brewers and suppliers to discuss new hop products and malt varieties.• Operating a forklift having recently gained my forklift qualification.
