I view the moment one savors a meal to be an extremely magical time. It is a moment where one’s palate is tantalized. It is also a personal moment when enjoyed in the company of good friends; where one discovers new flavors, and new horizons.From a Chef’s point of view, this is pinnacle moment to tell a story…Often, people ask me “what type of cuisine do you make” or “what is your favorite dish”? I, however, prefer to talk about my cooking philosophy. My cooking is rooted and inspired by my origins, travels, and the people that I meet. I know the term is not PC here in the United States, but I use the term “metisse” cuisine to define my style. My dishes mix flavors and exotics spices to traditional European dishes and techniques. I was born and raised in Alsace, France; relocated with my family to Martinique in the French Caribbean; and have come to love and embrace America through Harlem and the Midwest. I invite you on this flavorful journey with me.
