Mindy Keith is an herbalist, pastry chef, roundsman, and new mom in Portland, Oregon. Keith spearheaded the desert program of Xico, Southeast Portland's goto for fine dining authentic Mexican cuisine. Since the restaurants opening she has established herself as the newest darling of our local desert scene, garnering more media attention than it would be modest to list, even making the short list of 2013's newest top chef's to watch. A life-long curiosity for food began for Keith at an early age as she dipped her nose into the many herb jars at her father’s apothecary. The smells opened up a whole new world, immediately transporting her to exotic places. She went on to bake for St. Honore, Dragonfly Coffee House, numerous pop ups, charity events as well as founding and operating her own independent catering company.
