THE REASON BEHIND HIRING A SOMMELIER As head sommelier in some very high level places, I am meeting always the same questions and same subjects, old stock, non moving items, slow moving items, and products kept in poor conditions. The essence of solution for this is always the same thing! Hire someone who knows! But comes the package, salary, etc, and a sommelier ( I mean a real trained and passionate sommelier) is considered unnecessary expense! Once the cost of loss on beverages sales+the cost of slow or non moving items and no more drinkable beverages has been summed up, we see that all the waste can be avoided.Also the last but not least is guest experience will become a more attractive environment for drinkers, and control better the stock rotation and ensure QUALITY!!!! It seems I have still lots of work before high hierarchy who decides the manpower requirements for restaurants operation acknowledge this fact!
