Personalized Nutrition and Nutritional Genomics.

Working directly with patients, nurses, physicians and other healthcare workers under the guidance of Registered Dietitians in order to complete an eleven-month generalized program with an emphasis on psychiatric disabilities. The internship provides supervised practice experience with rotations in food service administration, clinical management, clinical nutrition, community nutrition, education/marketing/media, staff relief, as well as an elective rotation at the UCD Center of Excellence for Nutritional Genomics to provide experience specific to individual goals.

Work directly with patients, RDs, nurses and physicians, completing morning paperwork which includes determining which patients are to be seen each day based on initial risk and length of stay, entering tube feeding/TPN/diet orders, nourishments/special diet preferences and dietary allergies, performing screens as well as follow ups on patients at low to moderate nutritional risk, reviewing charts, estimating calorie needs, performing calorie counts, providing education to patients concerning their specific dietary needs, writing notes in pt computerized charts, determining level of risk using the nutrition support timeline as well as participating in a number of projects for national nutrition month, housewide mandatory assessments and teaching the modified diet class to new nutrition assistants. Familiarized with Computrition as well as Sunrise Clinical Manager computerized charting.

Work directly with patients and registered dietitians in a clinical setting, working on trayline, ensuring breakfast and lunch tray accuracy, delivering and picking up breakfast, lunch and snacks for patients, preparing snacks and specialty items including appropriately and accurately thickening liquids based on diet order, taking patient orders using Computrition, working with dietitians and nurses to maintain up to date diet orders, special services, fluid restrictions and allergy information, acting as a crucial line of communication between the patients and the dietitians.
