The Farmers Boy is now a 320 cover destination pub and kitchen on the outskirts of Hertford, Hertfordshire, having been a failing site before purchase. Full responsibility for every area of the business from accounts, supplier relationships, brand development, F&B offering & marketing to training and development of managers and staff; setting clear, achievable targets including GP & labour, and proactively coaching the team to achieve KPI’s. Grown sales circa 120% from takeover with healthy EBITDA and turnover exceeding £1.3M, gaining many awards and jumping through the tripadvisor ranks to become the number 1 pub in Hertford, attracting customers from as far as central London. Full design & refurb based upon target market and the addition of a highly successful separate ‘backyard’ venue attached.

I ran the third largest of Loungers’ sites of 98 at the time, I had direct responsibility for three other lounges within the vicinity. Coaching general managers through learning and development and providing assistance and motivation around all business functions led to the cluster making the largest growth with the best GP at the time, turnover circa £2.4M.

Responsible for relaunching a new, 600 capacity unique boutique club environment which had been unsuccessful under previous management. I built a new team, designed & implemented innovative operating procedures and standards, streamlining the business. Grown GP and operating profit based on target market. Built venue to become one of the must-visit destinations in Brighton and nationally to those visiting. Turnover continually exceeded directors’ expectations circa £2M Full P&L responsibility.

I was brought on board to oversee an extensive £500K refurbishment and re-launch of this historic venue as a retro supper club with luxury 3 course menu and an unrivaled burlesque, cabaret and music entertainment programme. With a host of diverse club nights, relaunching onto the scene with a bang. Promoted to senior general manager after six months, overseeing Proud City, Proud Camden and Proud 2Since joining Proud it has received much acclaim as the unrivaled best venue of its kind on the south coast, and has enjoyed top reviews both locally and nationally, of which I am truly proud.
