Test and enter fat, protein, total-solids, solids-not-fat content, pH, and viscosity data.• Make adjustments in software and systems in the event protein content in yogurt falls out of acceptable specification range. • Perform Charm SL (antibiotic) test in raw milk imports, perform bacterial direct microscopic counts on both milk imports and heavy cream exports. Must strictly follow state guidelines.• Weigh out starter culture, request control room operators to depressurize and assist in dosing culture tanks that are to be used to ferment skim milk. • Verify and validate x-ray machines on production lines function properly: detects foreign material, metals, and contaminants. • Call the production supervisor and request adjustments upon finding out-of-spec fat content, yogurt or fruit weight and any mislabeling or missing elements in final products. • Perform aerobic, coliform, yeast and mold plating, and colilert testing under biosafety cabinet (BSC laminar flow) using pipettes. Perform testing for allergens (coconut and gluten) in honey and fruit samples with appropriate test kits.• Resample final products stored in the cold warehouse for retesting and quality assurance. Prepare products under development for Supervisor, and Director of Quality. • Ensure seals on pasteurizers are untampered and checked daily, perform phosphatase testing in the event of a broken pasteurizer seal, must strictly follow state guidelines and protocol.• RCS air sampling. Pinocchio air sampling. Lighthouse air particle sampling. Environmental Swabbing.
