Delaware North Companies Australia delivered a total of 525,000 meals to 7,500 Commonwealth athletes and officials during the 2010 Delhi Games period as well as building 10,000 square metres of kitchen and dining facilities, recruitment and training of the 1100+ staff employed. As the Food Systems Compliance Manager, I played a pivotol role in the senior management project team by implementing the overall Risk, Work Health, Food Safety and compliance programs for the village, including staff inductions and training, operational systems and procedures as well as conducting verification audits including also the many suppliers and vendors used for the contract.

As the Executive Sous Chef of Etihad Stadium, I was charged with managing kitchen operations and events, including being responsible to lead a team of up to five Sous chefs and the broader brigade of casual chefs and cooks on a daily basis. This role involved ensuring that the daily production and culinary operations for events ran smoothly and on time, including the stadiums Corporate functions and Suites as well as the restaurants within the LiveWire and Medallion Club.Events at Etihad Stadium varied and could involve an AFL triple header, A leauge soccer, International Rugby Concerts or even special corporate events on the arena floor for up to 5000 guests for a three course sit down menu.

Delaware North Companies Australia delivered in excess of 350,000 meals to over 6,000 Commonwealth athletes and officials housed at the Athletes Village in Parkville during the 2006 Melboourne games. In my role as the Sous Chef and Purchasing officer, I played an integral role of the project team involved in the Menu and Recipe development and dietary analysis of all menu items. Responsibility of this role also included the set up and implementation of the production planning phase and purchasing of all village requirements covering food, beverage, consumables and equipment.
