I started Full Time serving (also singing Billie Holiday/Etta James/Duke Ellington covers on-call to tables and friends via Sam, lol!), either weeks or a month into brothers Sam and Costas Waez having just opened the restaurant.They realized their culinary dream of bringing Greek, classic Mediterranean, and their own native Syrian influences to the Tampa table would be so widely appreciated when people started showing up, some staying all day, all night even, crushing the backgammon tables, and the interest and crowd continued to build, as did the number now of Acropolis locations in the Tampa Bay area.Looking back, this job was hugely influential on me as a writer, server, and friend to many people. Kitchen was 100% open, serving station also, back then, and in true spirit of hard-working "we don't slack" attitude, in our downtime at 2, 2:30 or 3:00 am? Sam or Costes would see us huddled a bit, maybe having done sidework already but what the hell, time for a linedance, time to party, and somene would grab the next person's hand and so on, and down the dining room area and all around we'd go! Smashing plates OPA! (thusly climbing over plate chunks to get everybody's orders at end cap), Maria or Sam or somebody doing the lead dances in circle. And Bobby of our house band who played with his son on weekends, traditional Greek village music, was a kind soul and wonderful entertainer. If you had been there since 10 am, had delicious food on a generous break between shifts, and come 2:00 am were not quite ready for a line dance in some way, once you heard a dining hall full of laughing cheering clapping customers so happy you existed to smash plates, that might change.
