• Hand baking, shaping and firing; producing high quality products, largely by hand, using traditional techniques• Developing new recipes, expanding existing product lines and arranging product testing• Team leader - 8 Bakers• Responsible for creating production lines and scheduling, primarily across bread production >20 individual breads• Ovensman and operational planning to ensure maximum efficiency across the bakery• Coordination of product dispatch and logistics • Review of ingredients to reduce carbon footprint and environmental impact where possible• Stock control • Adherence with health and hygiene regulations, Natasha’s Law, environmental health; liaison with location council EHO requirements and inspections • Selling products (namely bread and scones) at food markets; selling directly to retail customers and discussing product specifications with current and potential wholesale customers • Business development; winning new customers and further developing relationships with existing customers • Reviewing and reporting on sales across 5 retail shops to ensure product/line viability and to ensure appropriate product levels being sent to each shop to maximise sales and minimise product waste

• Preparation and cooking of food for event buffets and set menus, covering catering of 20-500 covers• Working collaboratively with other Chefs and Events Assistants to ensure prompt service of all meals and buffet items in line with catering timelines and customer’s requests• Adhering to dietary requirements and preferences• Transportation of food, crockery, cutlery and glassware to venues• Ensuring minimal wastage from food preparation• Washing up and cleaning work stations at the end of service
