About Nathaniel Chu
A childhood chasing bugs set me up for a life working to avert ecological collapse. I am helping build Plonts (plonts.com)—a public benefit corporation that discovers and designs microbial communities to transform inexpensive plants into new categories of sustainable fermented foods. We are starting with the most resource-intensive and addictive dairy product: 🧀.In past lives as a field, experimental, and computational biologist, I've studied the dynamics of complex systems, from coral disease to poop. As a facilitator, I've taught leadership workshops during multiweek sea-kayaking expeditions at summer camp.
Listed skills include Biology, Evolution, Evolutionary Biology, Genetics, and 18 others.

Co-Ceo
CurrentMeat and dairy represent 14% of global greenhouse gas emissions, but replacement products taste terrible and cost too much, preventing mass market adoption. At Plonts, we discover and design microbial communities to transform inexpensive, nutritious, sustainable plants into new categories of fermented foods, starting with hard, aged plant-based cheese. www.plonts.com
Founder
CurrentAfter making cheese in my basement at the end of my PhD, I moved into a $2000 minivan, came to CA, and started Plonts as a public benefit corporation. Using money saved from graduate student stipends, I validated making aged cheese from sustainable, cheap, and healthy plants (boy, aging cheese takes a long time) while renting space in the corner of a pizza shop. I raised our first $1M in grants and venture funding. After two years validating that my individual vision wasn't a hallucination, I shifted gears into building the team needed to bring that vision to life, which included recruiting my first investor Josh to join as a cofounder.
Chief Executive Officer
Graduate Researcher, Biological Engineering
Advisor: Eric Alm. Translational microbiome research to address problems in human health. Particular focus on using computational and experimental tools to understand (1) the dynamics of fecal transplant in patients with inflammatory bowel disease, (2) practical determinants of microbial engraftment in fecal transplants, (3) longitudinal dynamics in the human immune system, (4) microbial drivers of metabolic syndrome and behavioral disorders, and (5) diagnostic potential of untargeted metabolomics.
Us Fulbright Fellow
I studied the transmission of microbes and pathogens across corals to understand disease dynamics in a changing climate. I also collaborated with local experts to provide classes on coastal conservation to teachers and government officials.
Smithsonian Tropical Research Institute Fellow
Metagenomic insights into coral microbial community dynamics
Research Associate
Advisor: Steve Vollmer. Phylogeography and adaptation genomics in intertidal non-model species, coral reef disease transmission, and sea scallop population genomics.
Expedition Leader
Designed and taught curricula on leadership, facilitation, conflict resolution, and communication to groups of 10–12 teens during multiweek sea kayaking expeditions. I was also a traditional camp counselor, and I will never, ever be that cool again.
Research Technician
Advisor: Heather Leslie and Mark Bertness. Effects of climate change and nutrient loading on coastal marine ecosystems.
