CurrentOpened in April 2023, Lita is a new Modern Iberian restaurant in Aberdeen Township, New Jersey by partners in business and in life James Beard-nominated chef David Viana and Neilly Robinson. Lita’s experience combines a menu of elevated Portuguese & Spanish food, inventive, craft cocktails by Bar Manager Ricardo Rodriquez (formerly at the Broken Shaker) and an industry-leading business model that fosters equity across the restaurant’s entire team. Named after my partner/chef David’s mother, Rosa Lita, the restaurant is a celebration of his family’s culinary legacy, who immigrated from Portugal to Newark, New Jersey in the 1970s. Lita is the third restaurant from Neilly Robinson and Chef David Viana, who are also behind beloved restaurant and cooking school Heirloom Kitchen, and the award-winning Heirloom at The St Laurent hotel in Asbury Park. Perhaps one of its most important elements, Lita operates with a highly unique team structure. Every team member is fully cross trained across the entire restaurant and rotates between front of house and back of house positions on a weekly basis. All non-management team members start at the same base salary, and split tips evenly. This model prioritizes equity across the team by ensuring equal pay, and by eliminating the industry’s outdated FOH vs. BOH hierarchy. Of course, it’s not without its challenges - but Lita is committed to paving the way for a more equitable restaurant industry.La OtraLocated right next door to Lita, La Otra is a brand new intimate neighborhood cocktail bar opening this July. At La Otra, Ricardo Rodriguez developed a collection of globally inspired cocktails that veer away from the strictly Iberaian menu at Lita. Starting in mid-July guests can swing by for a cocktail before dinner, or spend the evening tasting specialty cocktails and small plates. Similarly to Heirloom Kitchen, La Otra will also launch a series of cocktail classes created and taught by Ricardo.

Examples include pasta-making, healthy cooking, ethnic cooking, basic skills, making the most of the season’s fresh produce, to digging into a four-course meal you’ve made yourself (with a little help from our prestigious chefs, local butcheries, fisheries, and farms).Both owner and operator, Neilly manages all things Heirloom Kitchen—cooking school, restaurant, and retail. Originally founding Heirloom alongside her mother Judy Rosenblum, the pair attracted talented chefs from all over the tri-state area to collaborate in Heirloom’s open kitchen. Within its first year, Heirloom was named one of the “Best Cooking Classes Around the World,” by Food & Wine Magazine. In 2016, Neilly decided to evolve Heirloom’s retail and cooking school model by partnering with Chef David Viana and incorporating a Weekend Restaurant into the mix.Recently, Neilly staged with Andy Clark at Moxie Bread Co in Louisville, Colorado where she elevated her baking skills and developed a serious passion for naturally leavened breads.
