- I had too much free time on my hands during COVID, so I founded Loveland Chocolate- Did the very hard work of recipe creation and taste testing- I also established a network of wholesale operations, working with about 2 dozen boutique and general store owners throughout Northern Colorado to sell our chocolate in their storesThis business is not currently running, but I do still make chocolate for friends and family on special occasions.

Leapfrogging off of Loveland Chocolate, I opened a commercial kitchen / cafe. It was located within a beautiful building from the mid 1800's, located on the main drag of town, with a view of the mountains in the distance. We only sold food and drink items made locally. We had a small toy train that ran around the inside of the store at the top of every hour. It all had a bit of magic to it.I managed relationships with about dozen chefs who would rent time in the cafe kitchen. I managed retail relationships with about four dozen local food and drink makers, entrepreneurs who did not need our kitchen but who sold products in the storefront. I managed staff to run the register and espresso machine and day-to-day kitchen business. I also had fun organizing live music events and comedy shows and poetry jams and eventually I built a stage, by hand, to host ongoing events. Show less
