    Originally hired to fill the role of Sous Chef for their latest concept "Dapper Duck" and noticing my leadership potential throughout the successful opening of "Dapper Duck" I was asked to step into the role of Exec Chef for their flagship concept "The Downtown PourHouse"As Executive Chef in my first 30 days I successfully reduced food cost by 18%; increased productivity by 35-40% while maintaining staffing levels that adequately supported the business needs. Worked with the proprietors to develop an update menu from costing, design and food items. Since it's implementation in October of 2016 sales have increased 12% with 3 of the 9 new offerings constantly among the top 5 guest favorites.
