After an intial career as a Environmental Sustainability Manager working for Langham Hotels in New Zealand and Hong Kong and a brief stint in a tourism consulting company I decided to swap my suit and tie for a pair of whites. I completed my Cert 3 in 2013 with the ambition to bring my experience in sustainability, community engagement together with my love for the environment and good food.Im driven, ambitious and I am passionate. I feel at home in the kitchen and am driven to push myself to acquire new knowledge and leadership. I'm equally passionate about celebrating local and regional produce and forming working relationships with growers and suppliers to bring their produce forward in the kitchen.I like to look at what we do in the kitchen holistically recognising the coming together of many pieces of the puzzle to deliver a genuine experience. I am inspired by many factors including textures, colours, purity of ingredients, our local landscape and an appreciation for culture and tradition.My long term plan is to continually invest in improving my skill set whilst building the knowledge to create my own commercial lifestyle escape incorporating environmental design principals, perma-culture techniques and food forest systems designed with an emphasis on sustainability. A venture where clients leave with a holistic edible food experience.I am currently Head Chef at Noosa Beach House Restaurant part of the Sofitel Noosa Pacific Resort leading there fine dining restaurant.
