About Nick Croft-Simon
Our story started back in 2013 at the White Rabbit pub in Oxford, where I met my Co-Founder Matteo; I was behind the bar and Teo one of the chefs in the kitchen. During our time working there we saw a lot of customers missing out on the joy of Italian food because they were struggling to find gluten-free options. Inspired by Teo’s Italian heritage, we created White Rabbit to bridge the gap between unbelievably delicious Italian food, and everyone being able to enjoy it, so that no one misses out!Fast forward to today and we’re more committed than ever to creating delicious tasting food, so we’ve built our very own gluten-free bakery in Oxfordshire. Here we use traditional methods and high quality ingredients to produce food that is 100% the real Italian deal, with 0% of the gluten!
