About Nick Proia
As a Board Certified Pulmonary and Critical Care physician, and as a wine enthusiast, it bothered me that I was eating cheese (not so heart healthy) while enjoying wine (very heart healthy.) I tried to find a dark chocolate to serve as a healthier alternative to those dairy fats. I could not find a good quality chocolate that didn't interfere with all those nuanced flavors wine critics rave about.I decided to make my own. Sourcing the best West African product (no lead or cadmium here) I arrived at four different wine friendly chocolates. They were formulated not interfere with the wines they pair with but serve as a dutiful partner, like fries to a burger. While a great flavor profile on their own, these products are designed to let the wine show through unaltered and even perhaps enhanced.
