About Norman Aldredge

Throughout high school and college, I held many positions ranging from Fast Food and Short Order front and back of house to Private Club and Fine Dining Culinary Positions. After Graduation I was employed at Reynolds Plantation in Greensboro, GA. I have worked in all four full service restaurants ranging from casual American concepts at The Plantation Grille and Reynolds Landing's Blue Herron Room to upscale casual Continental Cuisine at the private Creek Club Dining Room and the first rate internationally ecclectic cuisine of the fine dining Overlook Room at Great Waters. I was a key player in starting the banquets department, and opening the quick service concept Kathy's Cafe, located at the members only Lake Club at Reynolds Plantation.I was promoted to F&B Manager, making me responsible for the operation of five food and beverage outlets. At the end of 2009, I designed a physical space and operational concept for a sixth outlet. I remodeled a location, purchased necessary furniture, china, glass, and silver, kitchen equipment, and restaurant supplies, and hired and trained all of the staff. The Waterview Room opened in March of 2010 and became a favorite lounge for the residents at Great Waters. In 2011 I joined Noble Interstate Hotels and Resorts as Chef de Cuisine of the Marriott Macon City Centerl. Over the next two years I assisted the Corporate Food and Beverage Director with opening four hotels including the Hyatt Midtown Atlanta where I was promoted to opening Executive Chef and was solely responsible for catering ownership events for the Noble Investment Portfolio.At the end of 2013 I accepted an opportunity as executive Chef of Atlanta Marriott Perimeter Center. At this property I was able to reign in out of control finances. I balanced the controllable operating supplies budget, reduced food cost of sales budget by 2%, and saved over $23,000 in labor cost cost all while increasing guest satisfaction and employee satisfaction scores.
