Modern Bread and Bagel is. a uniquely gluten free and kosher artisinal bakery and sandwich shop. House smoked salmon as well as a variety of unique cream cheeses and dips complement our fresh kettle boiled Ancient Grain Bagels. Our breads include Focaccia (v), a Rustic Bread Loaf, and a Seeded Multigrain (v) that can be topped with smashed avo, labneh, scrambled eggs, homemade hummus and more. Blends by Orly is a line of five gluten-free flour blends that are 1:1 replacements for flour in any recipe. Each blend has been developed for a particular category of baking and cooking so that the recipe tastes just as it's supposed to taste. Blends by Orly is the culmination of years of intensive research and development on the properties of gluten free baking during Orly's travels to New York, Paris, Sydney, London, and Tuscany. Blends by Orly is not a “one size fits all” gluten free substitute for wheat flour. Orly the Baker is the sole wholesaler of kosher and gluten free breads in Sydney. Her gluten free challah brioche rolls, sandwich buns, bagels, and pizza crust are available at select cafes, caterers and restaurants in the E. Suburbs of Sydney and will soon be available for order nation-wide. Her products are also dairy free and nut free. Her next product line to be launched will be gluten free muffins and cakes.

After she discovered her passion for baking under the tutelage of a pastry Chef in Paris, France, Orly Gottesman received her formal patisserie training from the Le Cordon Bleu Culinary Arts Institute in Sydney, Australia.Orly is currently the Gluten-Free Product Developer at Chompies restaurants in Arizona. Orly is working with the baking team to further develop The Chompies by Orly the Baker Gluten Free Friendly bakery product offerings.
