With over seven years of combined experience in the food and beverage, agro-industrial, and academic sectors, I am a passionate food science innovator and entrepreneur. I hold a master's degree in food science from the University of Melbourne and a bachelor's degree in agro-industrial and food engineering from Universidad de Las Américas Ecuador, as well as multiple certifications in ISO standards and food processing.As the General Manager of PROLOOP, a startup that produces insects and develops innovative products for animal and human consumption, I lead the design, development, and marketing of Loopi, the first insect-based protein snack in Ecuador. I also leverage my research and teaching skills as a full-time professor at Universidad de Las Américas Ecuador, where I instruct students on product design and development, process management, and agro-industrial plant and machinery design. My mission is to create and promote innovative and sustainable solutions for food security and nutrition, through research, education, and entrepreneurship.
