Over the last 15 years at Red and Blue Restaurants I've been able create and deliver innovative concepts that resonate with our guests. After the 10 years at Ego restaurants where we went from zero sites to a £5.6m sale and continued for 18 months on a more corporate journey I decided I wanted to create restaurants that suited their location and do away with the cookie cutter approach that brands use. Since the inception of Salt House Tapas in 2010, I've been instrumental in the design, creation, and operational success of multiple dining ventures, culminating in the strategic sale of several establishments in 2024. Now with Bacaro we have the ability to focus on one restaurant, making all aspects of the operation the best they could possibly be.
