I wanted to participate in the city's booming restaurant scene and see what it would be like to produce a restaurant.What followed was 5 months of intensive renovation project management and setting up shop:-Coordinate renovation efforts and ensure delivery dates with contractors -File for and obtain required licenses and permits-List needs and negotiate contracts with suppliers-Recruit singular staff and establish dinning room protocol-Build and maintain administrative structure-Develop and cultivate client baseIn conclusion, we created a one-of-a-kind neighbourhood bistro that feels like a Manhattan eatery tucked away in this Montreal neighbourhood currently undergoing a renaissance, already famous for its culinary offerings (Milano, Jean-Talon Market, Impasto, etc).
