These may include but are not limited to meat carving, fish service, cheese trolleys and flambes.As a captain I was expected to perform the duties of sommelier. This includes making wine recommendations, handling and serving wine, decanting bottles and recommending wine and food pairings according to the chef’s menu“Mise en Place” is a French term that literally translates to “putting in place.” Another one of my main responsibilities was to make sure that the restaurant space and kitchen are set up to achieve swift service and acceptable food. *As a manager of the hotel, I basically decided the structure of its operations. As manager I also worked out the finances, hiring of employees, and coordinating with the vendors and clients• To make sure the environs of the hotel were maintained in topmost condition always. • As Manager I actively participate in deciding the menu*As manager I was to see to it that the hotel's activities are in compliance with the laws and in accordance with health and safety regulations.•As manager I hired employees, assign them to teams, delegate work to them, and most importantly keep them motivated. The regular squabbles with the clients can upset the staff in the hotel, at such times, as manager I intervened and stood up for my employees, while providing a solution to the client's problem as well.
