My career is not unlike that of my peers working up through the ranks of the hospitality, healthcare, retirement and education sectors. A proven leader in Hospitality, Health Care, Long Term Care, Assisted and Active Living Communities in Food Services with 4 decades experience successfully operating on both sides of the steam table. My leadership style includes both mentoring and training of small and large from 1 to as many as 500 skilled and dedicated team members encompassing diverse backgrounds, cultures and education skill sets providing dietary and hospitality services to clients as well team members from the various internal departments. Some of my most challenging and rewarding work has been in-theater settings overseas in military installations, as well as private clubs, cruise ships, hotels, convention facilities, refinery and oil serving camps, diamond mine and remote camps and large construction camps serving nutritional meals of up to 14000 people. My skills and education include advanced culinary instruction in disciplines of food preparation, large batch production, nutrition, food costing controls, compliance documentation and reporting.I utilize advanced computer skills and attributes which include spreadsheet design and production in addition to having an advanced knowledge of all Microsoft programs to facilitate budgeting, meal plans and menu production.My skill set of managing, servicing and purchasing capital expenditure supplies and equipment provides the ability to enable the contingents of working teams within a facility or company to produce the fine quality product and services expected by our clients and family members.The passion to serve nutritionally balanced fare is only in part to a commitment in managing any operation in a safe and efficient manner.
