Patrick first discovered his passion for food as a child on family holidays to france over the first 15 years of his life, it was at 16 that he got his first job under the expert tuition of Roger Carr. While learning the skills needed to thrive in busy kitchens from Roger he attended Birmingham College of Food for 2 years, while there Patrick was privileged enough to be chosen from over 80 chefs to be one of 12 sent to Marseille in France, where he worked for 2 weeks in Les Trois Forts Restaurant under the Executive Chef Dominique Frerard.After graduating with distinctions from Birmingham College of Food Patrick moved to London, England to begin his employment at Claridges Hotel where he learnt the art of fine dinning and catering for high profile guests. During his time there Patrick was able to work with many different nationalities and develop a strong understanding of teamwork.The next step in his career was to move to the busy London brasserie of Kettners. It was working in this busy establishment that Patrick was able to hone his management skills, and advance himself in his chosen profession. Having decided to expand his culinary knowledge and further his expertise Patrick moved to Thailand with the aim of gaining employment.Upon arriving in Thailand Patrick gained employment at The Westin Siray Bay Resort & Spa. This 5 Start Resort had an opening for its Italian kitchen "Prego by the beach". Working here he has improved his Knowledge of Italian cuisine and kitchen management. Working with and building a strong Thai team then managing them has been a great learning curve and a fantastic success. Not to mention an appearance on Iron Chef Thailand with Executive Chef Adam Tanner
