In 2018, I settled on the island of Noirmoutier which has a centuries-old tradition of salt farming at the same time as I followed a specialized training program in Guérande. With 16 crystallization ponds, my salt pan has a production capacity of up to 40 tons of coarse salt and 2 tons of fleur de sel a year, weather permitting.
