    This is where I learned to handle many aspects of business. I was in charge of all the income via private and group lessons and the money going out via payroll.I also learned to manage alot of people. Directly I was in charge of 12 but I was also indirectly managing 200 ski instructors. They are a wild bunch and VERY entertaining. I have always thought it would make a great reality show if it weren't for the fact they wear a great deal of clothing.It was during these 7 years that I began making truffles and eventually selling them. I was very fortunate to work under Annie Vareille Savath, the Vice President of Ski School and an icon in the industry. We also had cooking in common - she had owned two French restaurants. and yes, she is French. She also taught me a great deal about management and being a woman in business. We are still close friends. She takes the truffles to France every year as gifts - I always get a kick out of that.

    I began at The Peaks as a Pastry 1 which is the lowest person on the totem pole. I served under 3 Pastry Chefs, each one teaching me - and you learn ALOT like this. But because each pastry chef was either fired or was injured doing risky outdoor activities, I became the pastry chef by default.My tuteledge at this resort was a tremendous experience. I learned much about the industry, but I also learned about the romance and the drama of this profession. I have many stories - I could write a book but Anthony Bourdain already did.
