Tasked with renovating & rejuvenating the wine program at Bistro Mosman after 4 years of trade, I started by analyzing the Bistro's current stock holding, organized their cellars, stores, bars and wine cabinets. The menu was then brought to 100% accuracy on spelling, regionality, vintages and formatting, ensuring the same process was checked through the POS including pricing. Sighting market trends and fantastic wines that deserved to be listed at an iconic venue, I hand selected new wines to invigorate the list. On starting at 12 Micron I inherited a wine program that had set out to achieve greatness and aimed to win awards, so the initial outlay was approached with exuberance. This presented a new challenge for me to focus on reducing, consolidating and transferring the beverage stock holding within AVC. We achieved a 25% reduction in my 6 months and distributed the final holding across the NSW venues which was a mammoth task on a very short handover.
