Our decision to jump in and re-create the crown jewel of the bucolic hamlet of Oakland, Oregon was primarily a catylist to help breath hospitality back into the community and provide the type of dining excellence that the Umpqua Valley Wine Region deserves.With a local sourced, farm-to-table menu and extraordinary wine list, Tolly's was once again that special destination dining experience that discerning gourmand's deserved. As a partner in this special project I was specifically tasked with every step from renovation to operation. Other tasks included: Menu design, nutrition analysis, purveyor relations and negotiation, wine list curation and bar management, HR, POS, business optimization and planning, inventory control, budgeting, and data system management, Catering, food safety and training. All basic responsibilities of running a world class, high output restaurant.
