The Star Entertainment Group is an ASX 100 listed company that owns and operates The Star Sydney, The Star Gold Coast and Treasury Brisbane. As part of TSEG’s $385 million revamp of The Star Gold Coast, the SEG Butler Operations department was established in September 2017 to elevate the service levels of the property to its next level. My role was to oversee and manage the department for SEQ. Servicing predominantly VIP International Guests visiting from all over the world, the department was setup to be the beacon of excellent guest service within this property.

The Private Gaming Rooms at The Star Gold Coast is an exclusive, members only gaming space within the previously known Jupiters Hotel & Casino. There are 3 private gaming floors, and 6 private gaming salons - span across 2 towers and 4 floors currently. The property has recently completed its transition to The Star Gold Coast and is currently in the midst of building and completing a new tower. Upon completion late 2017, the new Darling Gold Coast will comprise of the new Sovereign Room for Premium Gaming, VIP Premium Gaming Lounge, additional 8 Private Premium Gaming Salons and 57 hotel suites and penthouses.

4.5 star redeveloped hotel that includes 146 newly renovated rooms, a 90-seat a la carte restaurant, boutique bar, sports bar, beer garden, bottleshop, fully equipped gymnasium, and outdoor pool. Rebranded as a Holiday Inn in October 2013 and in 2015 completed the opening of a 300-capacity meeting and function rooms, 1000 capacity modern pub. This was then followed with the completion of a 1000 capacity event and exhibition centre in 2016.

Overlooking the daily operations of 7 out of 10 F&B outlets scattered across the university. Outlets overlooked include 3x coffee carts, 3x cafes and 1x a la Carte restaurant. My key role was business improvement - seeking to improve and introduce concepts, policies and procedures that could further grow and develop the businesses.

The Library Café was located within Australia’s largest library which frequents up to 3,000 at one time and 10,000 daily. Broke even within first month of trading. Achieved annual target of $100k profit within first year of opening.Put together a manual guide for cash handling, to be standardized through all Food & Beverage and Retail outlets within the university.Relaunched new fit-out and refurbishment of a-la-carte restaurant, 2 coffee carts, new menu concept for Crunch Cafe at the Sports and Aquatic Centre and rebranded Globe Cafe to fit the demographic of international student market base.

Sovereign Room and Gold Suite, also known as the Private Gaming Rooms is a membership - only by invitation gaming space. The room consists of bars and a private dining room for the comfort of high rollers and guests alike. The VIP Dining Room boasts up to 70 seats which frequents up to 1,500 covers daily.

Management of a 40-seat contemporary fine dining restaurant. Rosters and staff management. Recruitment and training of staff. Liaise with Executive Chef regarding daily specials and menu changes. Sourcing of wine suppliers and improvements of wine menu.
