Job entailed day to day running of the kitchen making sure site is producing safe food in a safe enivronment. I had to ensure site conformed to all health and safety regulations through training and self audits. I was responsible for stock control which included weekly stock counts and deliveries. I also worked with a team below me producing food to company specifications and and was also responsible for the HR responsibilities for my team. During my time as a kitchen manager I passed whitbreads progressing into kitchen manager course. It was a 7 month course involving training days about P&L analysis, advanced kitchen training, coaching my team, leadership skills, development of my team, employee relations and labour management.

I started as a waiter taking orders, clearing tables and looking after the customers. It was not long before I was trained to work behind the bar, which required me to serve customers, take money and restock bar when nesercary. To allow me to be promoted I have been on a first aid course, a personal licence course and I have been on a micros stock control system course. I have also been sent to other Brewers Fayre’s as a stand in manager to broaden my knowledge of how different Brewers Fayre’s are run.
