I am a highly recognisable professional who migrated to Australia to follow my passion for the hospitality industry. I worked at various venues before joining the Merivale Group in 2005, where I worked as a Bar Supervisor. In 2008, I worked as Bar Manager at that time very well know Lotus Bar and Bistro in Potts Point. I managed the venue for more than two years, an over that period, I was able to compete in highly recognisable global and national competitions and won the Time Out 2010 Best Cocktail Bar Awards and a highly commented Bartender of The Year. In 2010, I was named one of the 50 most influential people by Australia’s Bartender Magazine and nominated for Bar Manager of the Year. In 2010, I started to work as an Assistant Group Manager for Merivale, where I worked on opening and overseeing venues such as Palmer & Co, Mr.Wong, Ms.G’s, Excelsior Hotel, The Beresford Hotel and The Fish Shop. In 2013, I joined the Barrel House Group and worked as a General Manager at The Barber Shop Bar, and in 2015 I was awarded a Bar Manager of The Year by Bartender Magazine Australia. A year after that, I opened a successful 9months pop-up bar called Gin&It at the newly opened Barangaroo precinct. The same year, I was nominated as one of the Top 25 Bartenders in Australia, In 2016, I worked as a Beverage Support Consultant for the Merivale and helped with menu design, staff training and opening with Queens Chow Hotel in Enmore.In 2019, I consulted and opened The Cumberland Bar in Manly. The Cumberland was nominated for 6 Bartender Magazine Awards 2020, including my nomination for the Bar Manager for Year. The Cumberland Bar won the Best Small Bar of The Year. In 2022, I became the Head of Beverage for Foralus Group overlooking The Cumberland, Donny’s Bar, Insitu, Market Lane and Fat Joe’s, all in Manly. In September 2022, I also started my own consulting business Mix Better With Petr and have already been able to help with staff training and wine and cocktail menu for The Oborozuki restaurant at Circular Quay.
