My journey as a Doctoral Researcher at the University of Helsinki has been dedicated to the innovative use of food side streams, transforming them into healthier food options. The focus of my research is on the biosynthesis of polysaccharides by lactic acid bacteria, a work that intertwines microbiology with a commitment to sustainability.The team and I leverage HPLC and UHPLC techniques to analyze the impact of our work on gut microbiota. Through collaboration, we strive to repurpose brewers' spent grain, turning it into nutritious cereals, pastas, and even protein-rich beverages. Our goal is to contribute to a healthier world by making sustainable food solutions a reality.
