In pursuance of my Ph.D. in Food Science, I specialized in the intricate study of water-in-water emulsions by examining the thermodynamic incompatibility of biopolymer solutions and mapping their phase diagrams. My work extended to the stabilization of these emulsions using Pickering particles, advancing the frontier in biopolymer emulsion science and offering new vistas in food texture and stability.

Deepening my expertise in Food Process Engineering during my Master’s, I successfully gained valuable experience in mass and energy transfer modeling within food processing operations. Pioneering in the field, I conducted the first simulations of heat and mass transfer during the baking process, considering the volumetric expansion of the bread.
